Coconut Curry Soup
Ingredients
- 1 tbsp extra virgin olive oil
- 1 tbsp ginger (chopped)
- 2 cloves garlic (minced)
- 1 yellow onion (chopped)
- 2 tbsp curry powder
- 2 cups mushroom (sliced)
- 1oz lemongrass (chopped)
- 1 cup broccoli (chopped)
- 1 tbsp lime juice
- 3 cups organic coconut milk
- 4 cups organic vegetable broth
- 1 zucchini (spiralized into noodle)
- 1/4 cup cilantro
- 1 tbsp chili flakes (optional)
Instructions
- In a pot over medium-low heat, add the olive oil, ginger, garlic and onion.
- Saute for 3-5 minutes, then add in curry powder, mushrooms and lemongrass.
- Once the mushrooms are cooked through, add in broccoli, lime juice, coconut milk and broth.
- Bring to a boil, reduce heat and simmer for 10 minutes.
- Add zucchini noodles at last minute, and remove from heat.
- Serve in bowls, and garnish with cilantro and chili flakes.
