Sweet Potato Sausage Breakfast Hash
Ingredients
- 6oz pork sausage (casings removed)
- 1 sweet potato (diced into cubes)
- 3 cups kale leaves (chopped)
- 1 apple (medium, cubes)
- 1/8 tsp cinnamon
- 1/4 sea salt
Instructions
- Cook the sausage over medium heat, breaking i up into crumbles with the back of a spoon as it cooks. Once it is cooked, remove and set aside on a plate.
- In a small skillet, add the diced sweet potato and cook over medium-high heat for 1-2 minutes or until brown on one side. Lower the heat to medium, stir and cook for 7-8 more minutes or until tender and cooked through.
- Add the kale leaves and cubes apple to the sweet potato with the cinnamon. Cover with lid and cook over medium heat for 1-2 minutes or until the kale is wilted. Then add the sausage back to the skillet and mix until warmed through.
- Add sea salt to taste and serve.
