Sweet Potato Sausage Breakfast Hash

Ingredients

  • 6oz pork sausage (casings removed)
  • 1 sweet potato (diced into cubes)
  • 3 cups kale leaves (chopped)
  • 1 apple (medium, cubes)
  • 1/8 tsp cinnamon
  • 1/4 sea salt

Instructions

  1. Cook the sausage over medium heat, breaking i up into crumbles with the back of a spoon as it cooks. Once it is cooked, remove and set aside on a plate.
  2. In a small skillet, add the diced sweet potato and cook over medium-high heat for 1-2 minutes or until brown on one side. Lower the heat to medium, stir and cook for 7-8 more minutes or until tender and cooked through.
  3. Add the kale leaves and cubes apple to the sweet potato with the cinnamon. Cover with lid and cook over medium heat for 1-2 minutes or until the kale is wilted. Then add the sausage back to the skillet and mix until warmed through.
  4. Add sea salt to taste and serve.
