Paleo Potato Pancakes
Your kids are going to have so much fun making and eating these pancakes.
 
These are our new favorite in our household. My daughter loves making these for breakfast. We even eat these for dinner.
 
They’re dairy-free, gluten-free, nut-free, and egg-free. They taste so delicious. Eat them as part of breakfast, lunch, dinner, and even snacks.
 
The recipe here is the plain version. You can create your own version by adding chopped vegetables and even organic uncured bacon.

Savory Potato Pancake

Ingredients

  • 3 large potato (russet / Yukon gold / King Edwards / Maris Piper / Desirée)
  • 4 tbsp Tapioca Starch / Tapioca flour
  • 3 tbsp water
  • salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Peel and cut the potatoes into quarters.
  2. Place the potatoes in a large pot and cover with cold water. Then bring to boil until fork tender (about 10-15 minutes).
  3. Drain cooked potatoes and lightly mash the potatoes with a fork.
  4. Season with salt and pepper.
  5. Add the 3 tablespoons of water and Tapioca Starch / flour. Then mix until well blended and creamy without feeling dry or crumbly. Add a little extra water if needed.
  6. Form the potato mixture into pancake-shape with your hands.
  7. Add olive oil in a large frying pan over medium heat. And place the potato pancake and cook until golden brown on both sides.
  8. Serve and enjoy.
