15 Minute Grilled Steak with Mint Pesto

Ingredients

  • 2 tbsp almonds (slivers)
  • 1/2 garlic clove
  • 1/4 cup mint leaves (fresh)
  • 1/2 cup parsley
  • 2 tbsp extra virgin olive oil
  • 1/2 lemon (juiced)
  • 8oz New York striploin steak
  • 1 tsp sea salt
  • 1 1/2 yellow bell pepper (sliced)
  • 1/2 cup red onion (sliced into 1/8)
  • 1.5 tsp Balsamic vinegar

Instructions

  1. In a food processor, combine almond slivers, garlic, mint, parsley, olive oil and lemon juic. Pulse until a thick paste forms. Set aside.
  2. Preheat grill to medium heat.
  3. Rub steaks generously with sea salt.
  4. Place yellow peppers, red onion and steaks on the grill.
  5. Cook for 4-5 minutes and then turn. Cook for another 4-5 minutes.
  6. Note: Time will vary depending on grill temperature. 4 minutes per side will yield medium rate.
  7. Remove veggies and steak from the grill.
  8. Toss the veggies in balsamic vinegar and drizzle with a splash of olive oil.
  9. Serve steak topped with a spoonful of mint pesto.
